  • 2 cups chicken broth
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 8 oz. cream cheese (softened)
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano (dried)
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. chili powder
  • 2 tbsp. lime juice
  • 2 tbsp. cilantro (fresh, chopped)

Instructions

  1. Prepare ingredients by combining diced green chiles, drained beans, onion, garlic, spices, lime juice, and cilantro in the slow cooker.
  2. Place the chicken on top of the mixture and ensure it's covered.
  3. Cover the slow cooker and cook on low for 7 hours or high for 4 hours.
  4. Once cooked, remove the chicken, shred it using two forks, and return it to the pot. Stir well to combine.
  5. Serve hot with optional toppings like sour cream or tortilla chips.
