- 1 lb. boneless, skinless chicken breasts/thighs
- 2 cups chicken broth
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans (drained)
- 1 (15 oz.) can great northern beans (drained)
- 1 cup chopped onion
- 3 cloves minced garlic
- 8 oz. cream cheese (softened)
- 1/2 tsp. cumin
- 1/2 tsp. oregano (dried)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. chili powder
- 2 tbsp. lime juice
- 2 tbsp. cilantro (fresh, chopped)
Instructions
- Prepare ingredients by combining diced green chiles, drained beans, onion, garlic, spices, lime juice, and cilantro in the slow cooker.
- Place the chicken on top of the mixture and ensure it's covered.
- Cover the slow cooker and cook on low for 7 hours or high for 4 hours.
- Once cooked, remove the chicken, shred it using two forks, and return it to the pot. Stir well to combine.
- Serve hot with optional toppings like sour cream or tortilla chips.
