Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 1 tbsp chili powder
- 2 teaspoons ground cumin
- 1 cup frozen corn
- 2 – 10 ounce cans fire roasted tomatoes and green chiles
- 2 – 15 ounce cans cannellini beans
- 1/2 cup buffalo sauce
- 2 cups low sodium chicken broth
- 4 ounces cream cheese (room temperature)
- 4 ounces blended cottage cheese
Instructions
- Prepare your ingredients by measuring them out.
- In a slow cooker, combine all ingredients except cream cheese and cottage cheese. Stir well.
- Cover and cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
- Remove the chicken, shred it using two forks or a hand mixer, then return it to the pot.
- Whisk in cream cheese until smooth, cover again, and cook on low for an additional 30 minutes to blend flavors.
- Stir in blended cottage cheese before serving.
