  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)
  • oil
  • 1 tbsp cornstarch

Instructions

  1. Season the chuck roast by coating it in oil and applying a mix of steak seasoning and thyme generously on both sides.
  2. Heat a skillet over high heat and sear each side of the roast for 2-3 minutes until browned.
  3. Pour beef broth into the skillet to deglaze, scraping up any browned bits, then transfer this mixture to the slow cooker with the roast.
  4. Prepare optional vegetables by washing, peeling, and cutting them into large pieces. Toss them in oil and seasonings before placing them on top of the roast in the slow cooker.
  5. Cook on low for approximately 7-8 hours or high for about 3.5-4 hours until tender.
  6. Check tenderness and dissolve cornstarch in water; stir into cooking liquid if needed to thicken gravy.
  7. Serve warm, either directly from the slow cooker or plated.
