Ingredients
- 3 lb chuck roast (trimmed if needed)
- 2 tbsp steak seasoning
- 1 tbsp dried thyme
- 1 cup beef broth
- ⅓ cup water
- 2 lbs potatoes (optional)
- 1 lb carrots (optional)
- 1 yellow onion (optional)
- oil
- 1 tbsp cornstarch
Instructions
- Season the chuck roast by coating it in oil and applying a mix of steak seasoning and thyme generously on both sides.
- Heat a skillet over high heat and sear each side of the roast for 2-3 minutes until browned.
- Pour beef broth into the skillet to deglaze, scraping up any browned bits, then transfer this mixture to the slow cooker with the roast.
- Prepare optional vegetables by washing, peeling, and cutting them into large pieces. Toss them in oil and seasonings before placing them on top of the roast in the slow cooker.
- Cook on low for approximately 7-8 hours or high for about 3.5-4 hours until tender.
- Check tenderness and dissolve cornstarch in water; stir into cooking liquid if needed to thicken gravy.
- Serve warm, either directly from the slow cooker or plated.
