  • lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 6 cloves garlic
  • 1¾ cups heavy cream
  • ½ cup warm whole milk
  • 1 cup finely grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tbsp cornstarch mixed with 1 tbsp milk
  • ½ tsp cracked black pepper
  • ½ tsp kosher salt
  • 1 tsp Italian herb blend
  • Fresh parsley, finely chopped

Instructions

  1. Cook spaghetti in salted boiling water until al dente; reserve pasta water and drain.
  2. Season chicken strips with salt, pepper, herbs, and grated Parmesan.
  3. Sear seasoned chicken in olive oil and butter until golden brown; remove from skillet.
  4. In the same skillet, sauté minced garlic in remaining butter before adding heavy cream and warm milk; simmer until thickened.
  5. Stir in cornstarch mixture, then gradually add cheeses until melted and smooth.
  6. Combine cooked spaghetti with the sauce, adding reserved pasta water as needed for consistency.
  7. Fold in sliced chicken and garnish with fresh parsley before serving.
