  • lbs boneless, skinless chicken breasts
  • 18 oz rotini pasta
  • 6 cloves garlic
  • 1½ tbsp olive oil
  • 2¼ tsp Cajun seasoning
  • ¾ tsp smoked paprika
  • ¾ tsp red pepper flakes
  • Salt and black pepper to taste
  • 6 tbsp unsalted butter
  • 1½ cups shredded mozzarella cheese
  • 1⅛ cups grated Parmesan cheese
  • 1½ cups shredded sharp cheddar cheese
  • 2¼ cups heavy cream
  • 1⅛ cups low-sodium chicken broth
  • 3 oz cream cheese
  • ¾ tsp Italian seasoning
  • Parsley or dried herbs for garnish

Instructions

  1. Cook rotini in a large pot of salted boiling water until tender; drain and set aside.
  2. In a skillet, heat olive oil and half of the butter over medium-high heat. Add chicken, Cajun seasoning, smoked paprika, red pepper flakes, salt, and pepper; cook until browned.
  3. Stir in remaining butter and half of the minced garlic. Add half of each cheese until melted, then remove chicken from skillet.
  4. In the same skillet, add remaining butter and garlic; cook briefly before pouring in heavy cream and chicken broth to simmer.
  5. Whisk in cream cheese until smooth; then add remaining cheeses until thickened.
  6. Mix in Italian seasoning and adjust seasoning to taste.
  7. Toss cooked rotini into the sauce along with the chicken until evenly coated.
