  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup heavy cream
  • 8 oz penne pasta
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion, red bell pepper, green bell pepper, and minced garlic until softened (about 5 minutes).
  2. Add cubed chicken breasts and season with Cajun seasoning and smoked paprika. Cook until browned.
  3. Pour in chicken broth and diced tomatoes (with juice), then bring to a boil before reducing to a simmer.
  4. Stir in penne pasta and simmer for about 10 minutes until al dente.
  5. Lower heat and mix in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper.
  6. Serve hot, garnished with sliced green onions and chopped parsley.
