- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cubed
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 cup heavy cream
- 8 oz penne pasta
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onion, red bell pepper, green bell pepper, and minced garlic until softened (about 5 minutes).
- Add cubed chicken breasts and season with Cajun seasoning and smoked paprika. Cook until browned.
- Pour in chicken broth and diced tomatoes (with juice), then bring to a boil before reducing to a simmer.
- Stir in penne pasta and simmer for about 10 minutes until al dente.
- Lower heat and mix in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper.
- Serve hot, garnished with sliced green onions and chopped parsley.
