  • 1 tablespoon vegetable oil
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons minced garlic
  • Kosher salt and black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 rings (13 ounces each) beef sausage, sliced
  • 2 cans (15 ounces each) Great Northern white beans
  • Parsley for garnish

Instructions

  1. In a large pot over medium-high heat, add vegetable oil and brown the sliced beef sausage for about 7–9 minutes. Remove and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper until softened.
  3. Sprinkle flour over the vegetables and stir well; cook for another minute.
  4. Pour in chicken broth and milk; bring to a simmer.
  5. Add the browned beef sausage and rinsed beans; mix thoroughly.
  6. Reduce heat to medium-low and simmer until thickened (about 15–20 minutes).
