Ingredients
- 1 tablespoon vegetable oil
- 3 tablespoons unsalted butter
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons minced garlic
- Kosher salt and black pepper
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 1 cup whole milk
- 2 rings (13 ounces each) beef sausage, sliced
- 2 cans (15 ounces each) Great Northern white beans
- Parsley for garnish
Instructions
- In a large pot over medium-high heat, add vegetable oil and brown the sliced beef sausage for about 7–9 minutes. Remove and set aside.
- In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper until softened.
- Sprinkle flour over the vegetables and stir well; cook for another minute.
- Pour in chicken broth and milk; bring to a simmer.
- Add the browned beef sausage and rinsed beans; mix thoroughly.
- Reduce heat to medium-low and simmer until thickened (about 15–20 minutes).
