Ingredients
- 2 large ripe bananas
- ½ cup unsalted butter
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg for cream cheese filling
- ½ teaspoon vanilla extract for cream cheese filling
- ¼ cup granulated sugar for cinnamon sugar swirl
- 1 teaspoon ground cinnamon for cinnamon sugar swirl
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a bowl, mash the bananas until smooth. Whisk in melted butter, then add brown sugar, eggs, and vanilla extract; mix until combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture; stir gently until just combined.
- In a separate bowl, beat together cream cheese, granulated sugar, egg, and vanilla extract until smooth.
- Prepare the cinnamon sugar by mixing granulated sugar with ground cinnamon in a small bowl.
- Pour half of the banana batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture over this layer and spread the cream cheese filling on top. Add remaining batter and sprinkle with remaining cinnamon-sugar mixture; swirl gently with a knife.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
