  • ½ cup (100g) light brown sugar, packed
  • ½ cup (113g) butter, melted
  • 2 large eggs, room temperature
  • ½ cup sour cream, room temperature
  • 2 cups (256g) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare two 9×5-inch loaf pans with nonstick spray.
  2. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add an egg and vanilla extract; mix well. Incorporate 1 tablespoon of flour gradually until blended; set aside.
  3. In another bowl, mash ripe bananas. Stir in melted butter, both sugars, eggs, vanilla extract, and sour cream until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and baking powder; add to banana mixture until just combined.
  5. Pour half of the batter into each loaf pan; layer with cream cheese mixture, topping with remaining batter.
  6. Bake for 50-55 minutes until a toothpick comes out clean with moist crumbs attached.
