Ingredients

  • 250g bread flour
  • 250g all-purpose flour
  • 8g fine sea salt
  • 24g fresh compressed yeast
  • 100g whole milk
  • 80ml water
  • 2 eggs (lightly beaten)
  • 100g sugar
  • 1 vanilla bean (seeds scraped)
  • Zest of 2 organic oranges
  • 60g room temperature butter (for dough)
  • 250g room temperature butter (for laminating)
  • 2 tablespoons whole milk (for brushing)
  • Syrup: 100g sugar
  • 100g water
  • Seeds from half a vanilla bean

Instructions

  1. In a stand mixer bowl, combine bread flour, all-purpose flour, and salt.
  2. Dissolve yeast in milk and add it to the flour mixture along with water and beaten eggs; knead until smooth.
  3. Incorporate room-temperature butter, sugar, vanilla seeds, and orange zest; continue kneading until elastic.
  4. Place dough in a plastic bag; refrigerate overnight.
  5. Prepare a butter sheet by spreading room-temperature butter between parchment paper; chill until use.
  6. Roll out dough into a disk larger than the butter sheet; enclose chilled butter like an envelope.
  7. Roll out dough and perform multiple folds for lamination.
  8. Shape dough into triangles and allow them to rise for about two hours.
  9. Preheat oven to 375°F (190°C) and bake for around 15-17 minutes until golden brown.
  10. Brush with syrup immediately after baking.
