Ingredients

  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ cups graham cracker crumbs
  • ½ tsp salt
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 8 oz softened cream cheese
  • 2½ cups powdered sugar
  • 1¼ cup brown sugar (for caramel sauce)
  • ½ cup whipping cream
  • 5 tbsp butter (for caramel sauce)
  • ¼ tsp salt (for caramel sauce)

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time along with vanilla extract.
  3. In another bowl, whisk together flour, salt, baking soda, and baking powder. Gradually incorporate this mixture into the wet ingredients before folding in the graham cracker crumbs.
  4. Use a cookie scoop to portion dough, roll in additional graham cracker crumbs, flatten slightly, and place on prepared sheets.
  5. Bake for 8–10 minutes or until edges are golden. Cool on a wire rack before frosting with cheesecake icing.
