- ¾ cup softened butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 eggs

- 1½ cups all-purpose flour
- 1½ cups graham cracker crumbs
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
- 8 oz softened cream cheese
- 2½ cups powdered sugar
- 1¼ cup brown sugar (for caramel sauce)
- ½ cup whipping cream
- 5 tbsp butter (for caramel sauce)
- ¼ tsp salt (for caramel sauce)
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time along with vanilla extract.
- In another bowl, whisk together flour, salt, baking soda, and baking powder. Gradually incorporate this mixture into the wet ingredients before folding in the graham cracker crumbs.
- Use a cookie scoop to portion dough, roll in additional graham cracker crumbs, flatten slightly, and place on prepared sheets.
- Bake for 8–10 minutes or until edges are golden. Cool on a wire rack before frosting with cheesecake icing.
