- 24 sugar cookies or shortbread cookies
- 6 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream or whipped topping
- 1 package instant vanilla pudding mix (3.4 oz)
- 1 ½ cups cold milk
- ½ teaspoon almond extract (optional)
- Toppings: whipped topping, crushed cookies, sprinkles
Instructions
- Prepare the crust by crushing the cookies into fine crumbs and mixing them with melted butter. Press firmly into an 8×8-inch dish and refrigerate.
- In a bowl, beat softened cream cheese with sugar and vanilla until smooth. Fold in whipped topping until well combined and spread over the chilled crust.
- Whisk together pudding mix and cold milk until thickened; gently fold in crushed cookies. Spread over the cheesecake layer.
- Top with whipped topping and garnish as desired.
- Chill for at least 4 hours before serving.
