- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup whole milk
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour for streusel
- 1/2 cup brown sugar, packed for streusel
- 1/4 cup unsalted butter, cold and cut into small pieces for streusel
- 1 teaspoon ground cinnamon for streusel
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together melted butter, milk, eggs, and vanilla until well combined.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl; add cold butter and mix until crumbly.
- Fill muffin cups about 2/3 full with batter and sprinkle with streusel topping.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool for about 5 minutes before transferring them to a wire rack.
