  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour for streusel
  • 1/2 cup brown sugar, packed for streusel
  • 1/4 cup unsalted butter, cold and cut into small pieces for streusel
  • 1 teaspoon ground cinnamon for streusel

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla until well combined.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl; add cold butter and mix until crumbly.
  6. Fill muffin cups about 2/3 full with batter and sprinkle with streusel topping.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. Allow muffins to cool for about 5 minutes before transferring them to a wire rack.
