  • 1 and 1/2 cups mashed ripe banana (about 4 bananas)
  • For the cinnamon sugar swirl: 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 3 tablespoons dark brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Lightly grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, melt the butter and let it cool slightly. Whisk in granulated sugar, then add eggs and vanilla extract. Stir in flour and baking soda until just combined, followed by gently folding in mashed bananas.
  3. In a separate bowl, mix cinnamon sugar swirl ingredients until well combined. Adjust consistency if needed.
  4. Layer half of the batter in the prepared pan, dollop with half of the cinnamon sugar mixture, create swirls with a knife. Repeat with remaining batter and cinnamon mixture.
  5. Bake for 60-70 minutes until golden brown; test doneness with a toothpick.
