Instructions

- Combine wet mixture into dry ingredients; mix until thick batter forms.
- Line a baking sheet with wax paper; use a mini cookie scoop to drop batter onto the sheet. Roll each ball to smooth edges.
- Melt white chocolate chips with coconut oil in a microwave-safe bowl; drizzle over energy bites.
- Refrigerate for at least one hour until firm; store in an airtight container.
