Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 2 tbsp water
- 8 oz semi-sweet chocolate, chopped
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add milk, vegetable oil, eggs, and vanilla extract; mix until combined. Gradually stir in boiling water until smooth.
- Divide batter evenly among prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack.
- For the strawberry filling, heat chopped strawberries with sugar over medium heat; mix in cornstarch dissolved in water until thickened. Let cool.
- For ganache, heat cream until simmering; pour over chopped chocolate and let sit before stirring until smooth.
- Assemble the cake by layering the cake layers with strawberry filling in between and topping with ganache.
