- 100 grams egg whites
- 100 grams granulated sugar
- 100 grams almond flour
- 100 grams powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup butter
- 1/3 cup peanut butter
- 1 cup powdered sugar (for filling)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a double boiler, combine egg whites and granulated sugar, whisking until the sugar is dissolved.
- Transfer to a stand mixer and whip on high until stiff peaks form.
- Sift together almond flour, cocoa powder, and powdered sugar, then fold into the meringue.
- Pipe small circles onto baking sheets and bake for about 13 minutes.
- For the filling, beat together butter and peanut butter until smooth; add powdered sugar, vanilla, and salt.
- Cool macarons completely before piping filling between two shells.
