  • 100 grams granulated sugar
  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a double boiler, combine egg whites and granulated sugar, whisking until the sugar is dissolved.
  3. Transfer to a stand mixer and whip on high until stiff peaks form.
  4. Sift together almond flour, cocoa powder, and powdered sugar, then fold into the meringue.
  5. Pipe small circles onto baking sheets and bake for about 13 minutes.
  6. For the filling, beat together butter and peanut butter until smooth; add powdered sugar, vanilla, and salt.
  7. Cool macarons completely before piping filling between two shells.
