Ingredients
- ½ cup unsalted butter (or coconut oil), melted
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup cocoa powder (unsweetened)
- ¾ cup all-purpose flour (or gluten-free 1:1 blend)
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup dried cherries, chopped
- ½ cup mini chocolate chips (optional)
- ⅓ cup powdered sugar (for rolling)
Instructions
- In a large mixing bowl, whisk together melted butter and granulated sugar until well combined.
- Beat in the eggs one at a time followed by the vanilla extract until smooth.
- Sift in cocoa powder, flour, baking powder, and salt; fold gently until just combined.
- Stir in chopped cherries and optional chocolate chips.
- Cover the dough with plastic wrap and chill in the refrigerator for 1–2 hours.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized balls of dough and roll each in powdered sugar until fully coated.
- Bake for 9–11 minutes until tops are cracked but centers remain soft.
- Allow to cool on the tray for about 5 minutes before transferring to a wire rack.
