Ingredients

  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup cocoa powder (unsweetened)
  • ¾ cup all-purpose flour (or gluten-free 1:1 blend)
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup dried cherries, chopped
  • ½ cup mini chocolate chips (optional)
  • ⅓ cup powdered sugar (for rolling)

Instructions

  1. In a large mixing bowl, whisk together melted butter and granulated sugar until well combined.
  2. Beat in the eggs one at a time followed by the vanilla extract until smooth.
  3. Sift in cocoa powder, flour, baking powder, and salt; fold gently until just combined.
  4. Stir in chopped cherries and optional chocolate chips.
  5. Cover the dough with plastic wrap and chill in the refrigerator for 1–2 hours.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized balls of dough and roll each in powdered sugar until fully coated.
  8. Bake for 9–11 minutes until tops are cracked but centers remain soft.
  9. Allow to cool on the tray for about 5 minutes before transferring to a wire rack.
