- 3 large ripe bananas (about 1 1/2 cups mashed)

- 1/3 cup applesauce (or cooking oil)
- 3/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F and prepare a 9-by-5-inch loaf pan by lining it with parchment paper and greasing it.
- In a medium bowl, mix together flour, cocoa powder, baking soda, and salt.
- In a large bowl, mash the ripe bananas. Add melted butter, applesauce (or oil), brown sugar, egg, and vanilla extract; mix well until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 minutes to 1 hour and 10 minutes or until a toothpick comes out clean.
- Let cool in the pan for at least 30-45 minutes before transferring to a wire rack.
