  • 4 cups cooked rotini pasta
  • 1 cup fresh snow peas
  • ½ cup diced red bell pepper
  • ½ cup shredded carrot
  • 2 cups chopped napa cabbage
  • ¼ cup sliced green onions
  • 8 ounces canned sliced water chestnuts (drained)
  • ⅔ cup plain yogurt
  • ¼ cup soy sauce
  • ¼ cup mayonnaise
  • ½ teaspoon black pepper
  • ¼ teaspoon ground ginger
  • Honey (to taste)
  • Salt (to taste)

Instructions

  1. Preheat oven to 375°F. Spread sesame seeds on a baking sheet and toast for about 5 minutes.
  2. In a large mixing bowl, combine shredded chicken, cooked rotini pasta, snow peas, red bell pepper, carrot, napa cabbage, green onions, and water chestnuts.
  3. In another bowl, whisk together yogurt, soy sauce, mayonnaise, black pepper, ground ginger. Adjust sweetness with honey and add salt as needed.
  4. Pour the dressing over the salad mixture and toss until everything is evenly coated. Sprinkle toasted sesame seeds on top before serving.
