Ingredients
- 2 cups shredded cooked chicken breast
- 4 cups cooked rotini pasta
- 1 cup fresh snow peas
- ½ cup diced red bell pepper
- ½ cup shredded carrot
- 2 cups chopped napa cabbage
- ¼ cup sliced green onions
- 8 ounces canned sliced water chestnuts (drained)
- ⅔ cup plain yogurt
- ¼ cup soy sauce
- ¼ cup mayonnaise
- ½ teaspoon black pepper
- ¼ teaspoon ground ginger
- Honey (to taste)
- Salt (to taste)
Instructions
- Preheat oven to 375°F. Spread sesame seeds on a baking sheet and toast for about 5 minutes.
- In a large mixing bowl, combine shredded chicken, cooked rotini pasta, snow peas, red bell pepper, carrot, napa cabbage, green onions, and water chestnuts.
- In another bowl, whisk together yogurt, soy sauce, mayonnaise, black pepper, ground ginger. Adjust sweetness with honey and add salt as needed.
- Pour the dressing over the salad mixture and toss until everything is evenly coated. Sprinkle toasted sesame seeds on top before serving.
