Ingredients

  • 2 cups chopped celery
  • 2 medium Honeycrisp apples, diced
  • 1 cup toasted walnuts, chopped
  • 1/2 cup dried cranberries
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Wash and chop the celery into bite-sized pieces. Dice the Honeycrisp apples into small cubes.
  2. In a large mixing bowl, combine the chopped celery, diced apples, toasted walnuts, and dried cranberries.
  3. In a separate bowl, whisk together the lemon juice, olive oil, sugar, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and gently toss to coat evenly.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
  6. Serve in a bowl or on a platter; garnish with extra walnuts or cranberries if desired.
