  • 1 ½ lbs sirloin steak or ribeye, cut into bite-sized cubes
  • 2 tbsp Cajun seasoning
  • 8 oz medium pasta shells
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta shells in a large pot of salted boiling water until al dente. Reserve ¼ cup pasta water, then drain and set aside.
  2. Pat the steak cubes dry and toss with Cajun seasoning, salt, and pepper until coated.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear steak bites for about 2–3 minutes per side until browned; add butter and garlic for the last minute.
  4. In the same skillet, reduce heat to medium; add butter and garlic, sautéing until fragrant. Pour in heavy cream and simmer gently.
  5. Stir in cheddar cheese, Parmesan cheese, paprika, black pepper, and salt until melted.
  6. Add cooked pasta shells to the sauce; mix well and adjust consistency with reserved pasta water if needed.
  7. Top with seared steak bites and garnish with parsley before serving.
