Ingredients

  • 3 lbs red potatoes
  • 3-4 celery stalks
  • 6 hard boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c mayonnaise
  • 1/3 c sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Boil the potatoes in salted water until fork-tender (about 12–15 minutes). Drain and let cool.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, and all spices.
  3. Once cooled, combine potatoes, chopped eggs, celery, and green onions in a large bowl. Toss gently with two-thirds of the dressing until evenly coated.
  4. Chill the salad in the refrigerator for at least 30 minutes before serving. Just before serving, add remaining dressing and garnish with parsley and paprika.
