- 3 lbs red potatoes
- 3-4 celery stalks
- 6 hard boiled eggs
- 2 green onions
- 1½ tsp paprika
- 1/4 tsp cayenne
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 1/3 c mayonnaise
- 1/3 c sour cream
- 1 T apple cider vinegar
- 2 T Dijon mustard
- 1/2 tsp sea salt
- ½ tsp cracked pepper
Instructions
- Boil the potatoes in salted water until fork-tender (about 12–15 minutes). Drain and let cool.
- In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, and all spices.
- Once cooled, combine potatoes, chopped eggs, celery, and green onions in a large bowl. Toss gently with two-thirds of the dressing until evenly coated.
- Chill the salad in the refrigerator for at least 30 minutes before serving. Just before serving, add remaining dressing and garnish with parsley and paprika.
