Ingredients
- 1½ lbs boneless, skinless chicken breasts (sliced)
- 12 oz penne pasta
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic (minced)
- 1½ tsp Cajun seasoning
- ½ tsp smoked paprika
- Salt & black pepper, to taste
- 1¾ cups heavy cream
- 6 oz Velveeta (cubed)
- 1 cup shredded mozzarella
- ¾ cup grated Parmesan
Instructions
- Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In a skillet over medium heat, heat olive oil and 1 tablespoon of butter. Add seasoned chicken strips and cook until browned and cooked through (about 5-7 minutes). Set aside.
- In the same skillet, melt the remaining butter and sauté minced garlic for 1-2 minutes. Pour in heavy cream and stir well.
- Gradually add Velveeta cheese cubes while stirring until melted and smooth.
- Combine cooked penne pasta with the cheese sauce and sautéed chicken, mixing in mozzarella and Parmesan until well coated.
