  • lbs boneless, skinless chicken breasts (sliced)
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1½ tsp Cajun seasoning
  • ½ tsp smoked paprika
  • Salt & black pepper, to taste
  • 1¾ cups heavy cream
  • 6 oz Velveeta (cubed)
  • 1 cup shredded mozzarella
  • ¾ cup grated Parmesan

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and 1 tablespoon of butter. Add seasoned chicken strips and cook until browned and cooked through (about 5-7 minutes). Set aside.
  3. In the same skillet, melt the remaining butter and sauté minced garlic for 1-2 minutes. Pour in heavy cream and stir well.
  4. Gradually add Velveeta cheese cubes while stirring until melted and smooth.
  5. Combine cooked penne pasta with the cheese sauce and sautéed chicken, mixing in mozzarella and Parmesan until well coated.
