Ingredients
- 12 oz linguine pasta
- 1½ lbs boneless skinless chicken breasts
- 6 tbsp unsalted butter
- 7 cloves garlic
- 2½ tsp Cajun seasoning
- ½ tsp smoked paprika
- ½ tsp cracked black pepper
- ¾ tsp salt, divided
- 1¾ cups heavy cream
- ½ cup whole milk
- 1 cup freshly grated Parmesan cheese
- ¾ cup shredded mozzarella cheese
- 1 tsp cornstarch mixed with 1 tbsp milk
- 2 tbsp reserved pasta water
- 2 tbsp olive oil
- Fresh parsley, finely chopped
Instructions
- Cook the linguine in salted boiling water until al dente. Reserve some pasta water before draining.
- Season chicken strips with Cajun seasoning, smoked paprika, black pepper, and salt.
- In a skillet, heat olive oil and 4 tbsp butter over medium-high heat. Sear the chicken until golden brown and cooked through.
- Reduce heat; add remaining butter and sauté minced garlic until fragrant. Stir in cream and milk, simmering until slightly thickened.
- Add cornstarch mixture to thicken the sauce further; gradually stir in cheeses until melted.
- Combine linguine with the sauce and reserved pasta water, tossing gently to coat.
- Serve hot, garnished with fresh parsley.
