  • 12 oz linguine pasta
  • lbs boneless skinless chicken breasts
  • 6 tbsp unsalted butter
  • 7 cloves garlic
  • 2½ tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp cracked black pepper
  • ¾ tsp salt, divided
  • 1¾ cups heavy cream
  • ½ cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 1 tsp cornstarch mixed with 1 tbsp milk
  • 2 tbsp reserved pasta water
  • 2 tbsp olive oil
  • Fresh parsley, finely chopped

Instructions

  1. Cook the linguine in salted boiling water until al dente. Reserve some pasta water before draining.
  2. Season chicken strips with Cajun seasoning, smoked paprika, black pepper, and salt.
  3. In a skillet, heat olive oil and 4 tbsp butter over medium-high heat. Sear the chicken until golden brown and cooked through.
  4. Reduce heat; add remaining butter and sauté minced garlic until fragrant. Stir in cream and milk, simmering until slightly thickened.
  5. Add cornstarch mixture to thicken the sauce further; gradually stir in cheeses until melted.
  6. Combine linguine with the sauce and reserved pasta water, tossing gently to coat.
  7. Serve hot, garnished with fresh parsley.
