- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half and half)
- 3 tablespoons butter
- 3 cloves garlic (minced)
- 10 oz. diced tomatoes with green chilies (juice reserved)
- Cajun seasoning
- Hot sauce
- 1 tablespoon honey
- 2 teaspoons lime juice
- 1 ½ teaspoons Cajun seasoning
- 3 tablespoons flour
- 2 teaspoons hot sauce
- 1 teaspoon brown sugar
- ½ teaspoon mustard powder
- ½ teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- ¾ cup cheddar jack cheese (shredded)
- 1-2 tablespoons olive oil (or avocado oil)
- Lime wedges
- Fresh cilantro (roughly chopped)
Instructions
- Season the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-7 minutes per side until golden and cooked through. Set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Whisk in flour to create a roux, then gradually add chicken broth while whisking until smooth.
- Stir in heavy cream, honey, hot sauce, Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and diced tomatoes (with juice reserved). Simmer for about 5 minutes until thickened.
- Return the cooked chicken to the skillet and top with shredded cheese until melted.
- Serve hot over rice or your favorite side dish garnished with lime juice and fresh cilantro.
