- 3 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 2 cups granulated sugar
- 1/2 cup unsalted butter (room temperature)
- 2 large eggs (room temperature)
- 1 cup buttermilk (or milk with lemon juice)
- 2 1/4 cups very ripe mashed bananas (about 5 medium bananas)
- Optional: 1/2 cup chopped pecans
Instructions
- Preheat your oven to 300°F. Grease two 9×5-inch loaf pans and line them with parchment paper.
- In a bowl, whisk together flour, salt, baking powder, and baking soda. If using pecans, add them now.
- In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas until combined.
- Gradually mix in dry ingredients with buttermilk, starting and ending with dry ingredients to maintain a smooth batter.
- Pour batter evenly into prepared pans and bake for about 1 hour or until golden brown and a toothpick comes out clean.
