  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 1 cup buttermilk (or milk with lemon juice)
  • 2 1/4 cups very ripe mashed bananas (about 5 medium bananas)
  • Optional: 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 300°F. Grease two 9×5-inch loaf pans and line them with parchment paper.
  2. In a bowl, whisk together flour, salt, baking powder, and baking soda. If using pecans, add them now.
  3. In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas until combined.
  4. Gradually mix in dry ingredients with buttermilk, starting and ending with dry ingredients to maintain a smooth batter.
  5. Pour batter evenly into prepared pans and bake for about 1 hour or until golden brown and a toothpick comes out clean.
