  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar (for swirl)
  • 1 1/2 tsp ground cinnamon (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon; set aside.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, followed by mashed bananas, Greek yogurt, and vanilla extract; mix until smooth.
  4. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  5. Prepare the cinnamon swirl by mixing sugar and ground cinnamon in a small bowl.
  6. Pour half the batter into the loaf pan; sprinkle with half the cinnamon swirl mixture and half the blueberries. Add remaining batter on top.
  7. Finish with remaining cinnamon swirl mixture and blueberries; use a knife to gently swirl through.
  8. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
