Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/3 cup plain Greek yogurt
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 1/4 cup granulated sugar (for swirl)
- 1 1/2 tsp ground cinnamon (for swirl)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon; set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, followed by mashed bananas, Greek yogurt, and vanilla extract; mix until smooth.
- Gradually incorporate the dry mixture into the wet ingredients until just combined.
- Prepare the cinnamon swirl by mixing sugar and ground cinnamon in a small bowl.
- Pour half the batter into the loaf pan; sprinkle with half the cinnamon swirl mixture and half the blueberries. Add remaining batter on top.
- Finish with remaining cinnamon swirl mixture and blueberries; use a knife to gently swirl through.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack.
