  • 1/2 cup old fashioned oats (blended into powder)
  • 1 teaspoon baking soda
  • 1.5 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: spices (cinnamon, nutmeg, cloves) and nuts

Instructions

  1. Preheat oven to 350°F and prepare a 9×5 inch loaf pan.
  2. Cream the softened butter with brown and granulated sugars until fluffy.
  3. Add eggs and vanilla extract; mix until well combined.
  4. Mash the ripe bananas and fold into the mixture.
  5. Blend oats into a powder and add to the bowl with flour, baking soda, baking powder, and salt; combine gently.
  6. Fold in sour cream followed by optional spices and nuts if desired.
  7. Pour batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
