- 1/2 cup butter (softened)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe banana (about 2.5 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old fashioned oats (blended into powder)
- 1 teaspoon baking soda
- 1.5 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: spices (cinnamon, nutmeg, cloves) and nuts
Instructions
- Preheat oven to 350°F and prepare a 9×5 inch loaf pan.
- Cream the softened butter with brown and granulated sugars until fluffy.
- Add eggs and vanilla extract; mix until well combined.
- Mash the ripe bananas and fold into the mixture.
- Blend oats into a powder and add to the bowl with flour, baking soda, baking powder, and salt; combine gently.
- Fold in sour cream followed by optional spices and nuts if desired.
- Pour batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
- Let cool on a rack for at least 20 minutes before slicing.
