Ingredients

  • 500 g sunflower oil
  • 6 shallots (thinly sliced)
  • 10 garlic cloves (thinly sliced)
  • 3 tbsp chili flakes
  • 1 tbsp chili powder
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp sesame seeds

Instructions

  1. Heat sunflower oil in a deep pan over medium heat. Add sliced shallots and garlic, frying until golden brown and crispy.
  2. Remove fried shallots and garlic with a slotted spoon; drain on paper towels.
  3. In a heatproof bowl, mix chili flakes, chili powder, brown sugar, and salt.
  4. Allow the oil to cool slightly before pouring it over the spice mixture. Stir to combine.
  5. Add fried shallots and garlic back into the bowl along with soy sauce and sesame seeds; mix well.
  6. Let cool completely before transferring to sterilized glass jars and store in the refrigerator.
