  • 2 small green peppers, diced
  • 1 small yellow onion, diced
  • 2 cans (15 ounces each) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Instructions

  1. Sauté the diced green peppers and onions in a cast iron dutch oven until translucent.
  2. Add chili powder, garlic powder, onion powder, cumin, paprika, chipotle powder, cayenne pepper, salt, and white pepper; cook for 1-2 minutes.
  3. Incorporate the ground beef or turkey and brown until just done.
  4. Stir in tomato sauce, diced tomatoes, water, and tomato paste; mix well.
  5. Bring to simmer over medium-low heat for about 15 minutes; then add drained kidney beans.
  6. If desired, stir in baking soda to enhance flavor balance; simmer until bubbling subsides.
  7. Serve hot with your favorite toppings.
