- 2 pounds ground beef or turkey
- 2 small green peppers, diced
- 1 small yellow onion, diced
- 2 cans (15 ounces each) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (6 ounces) tomato paste
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 3 tablespoons chili powder
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 3 tablespoons cumin
- 1 tablespoon paprika
- 1 teaspoon chipotle powder
- ½ teaspoon cayenne pepper
- ½ tablespoon salt
- 1 teaspoon white pepper
- ½ teaspoon baking soda (optional)
Instructions
- Sauté the diced green peppers and onions in a cast iron dutch oven until translucent.
- Add chili powder, garlic powder, onion powder, cumin, paprika, chipotle powder, cayenne pepper, salt, and white pepper; cook for 1-2 minutes.
- Incorporate the ground beef or turkey and brown until just done.
- Stir in tomato sauce, diced tomatoes, water, and tomato paste; mix well.
- Bring to simmer over medium-low heat for about 15 minutes; then add drained kidney beans.
- If desired, stir in baking soda to enhance flavor balance; simmer until bubbling subsides.
- Serve hot with your favorite toppings.
