  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 160°C / 320°F (fan) or 180°C / 355°F (standard). Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas until smooth. Add canola oil, milk, both sugars, eggs, and vanilla extract; mix until well combined.
  3. Sift in the plain flour, baking powder, and salt. Gently fold until just combined; some lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes or until golden brown and a skewer comes out clean.
  5. Let it cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
