- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat the oven to 160°C / 320°F (fan) or 180°C / 355°F (standard). Grease and line a loaf tin with baking paper.
- In a mixing bowl, mash the overripe bananas until smooth. Add canola oil, milk, both sugars, eggs, and vanilla extract; mix until well combined.
- Sift in the plain flour, baking powder, and salt. Gently fold until just combined; some lumps are okay.
- Pour the batter into the prepared loaf tin and bake for 45-55 minutes or until golden brown and a skewer comes out clean.
- Let it cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
