  • 3 lbs bone-in, skin-on chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp water (for slurry)

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange chicken thighs skin-side up in a baking dish.
  2. In a medium saucepan over medium heat, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a boil then simmer for about 10 minutes.
  3. In a small bowl, whisk together cornstarch and water until smooth. Slowly add this slurry to the simmering sauce until thickened.
  4. Pour the thickened sauce over the chicken thighs and bake uncovered for 45–60 minutes until cooked through and caramelized, basting halfway.
  5. Let rest for 5–10 minutes before serving.
