  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Gently fold in the diced apple until evenly distributed.
  7. Spread the batter into the prepared baking pan using a rubber spatula.
  8. Mix together the topping ingredients (granulated sugar and cinnamon) and sprinkle over the batter.
  9. Bake for 25–30 minutes or until golden brown; a toothpick should come out clean when inserted.
  10. Allow to cool completely before cutting into squares.
