- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 medium apple, peeled and finely diced
- 2 tbsp granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Gently fold in the diced apple until evenly distributed.
- Spread the batter into the prepared baking pan using a rubber spatula.
- Mix together the topping ingredients (granulated sugar and cinnamon) and sprinkle over the batter.
- Bake for 25–30 minutes or until golden brown; a toothpick should come out clean when inserted.
- Allow to cool completely before cutting into squares.
