Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (180°C) and line a 9 x 4 inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time and mix in vanilla extract.
  5. Gradually fold in half of the dry ingredients followed by buttermilk; then add remaining flour until combined.
  6. Toss diced apples with brown sugar and cinnamon.
  7. Layer half of the batter in the tin, sprinkle half of the apple mixture, swirl gently, then top with remaining batter and apples.
  8. Bake for 55 to 65 minutes until golden brown; cool before slicing.
