Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 medium apples (peeled and diced)
- 1/3 cup brown sugar
Instructions
- Preheat oven to 350°F (180°C) and line a 9 x 4 inch baking tin with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, cream together butter and granulated sugar until light and fluffy.
- Add eggs one at a time and mix in vanilla extract.
- Gradually fold in half of the dry ingredients followed by buttermilk; then add remaining flour until combined.
- Toss diced apples with brown sugar and cinnamon.
- Layer half of the batter in the tin, sprinkle half of the apple mixture, swirl gently, then top with remaining batter and apples.
- Bake for 55 to 65 minutes until golden brown; cool before slicing.
