  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts or walnuts
  • 1/2 cup olive oil

Instructions

  1. Boil whole potatoes until tender. Drain and cool slightly before peeling and mashing until smooth.
  2. In a mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms; add more flour if too sticky.
  3. Divide the dough into sections and roll into ropes about ½ inch thick. Cut into bite-sized pieces and shape with a fork.
  4. Bring salted water to a boil and cook gnocchi in batches until they float to the surface. Remove with a slotted spoon.
  5. Prepare your chosen sauce by sautéing garlic, adding tomatoes or mushrooms and cream, or blending basil with nuts and oil.
