- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1 large egg

- 1 can crushed tomatoes
- 2 cloves garlic, minced
- Fresh basil leaves
- 2 cups sliced mushrooms
- 1 cup heavy cream (or plant-based alternative)
- 1 teaspoon thyme
- 2 cups fresh basil leaves
- 1/4 cup pine nuts or walnuts
- 1/2 cup olive oil
Instructions
- Boil whole potatoes until tender. Drain and cool slightly before peeling and mashing until smooth.
- In a mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms; add more flour if too sticky.
- Divide the dough into sections and roll into ropes about ½ inch thick. Cut into bite-sized pieces and shape with a fork.
- Bring salted water to a boil and cook gnocchi in batches until they float to the surface. Remove with a slotted spoon.
- Prepare your chosen sauce by sautéing garlic, adding tomatoes or mushrooms and cream, or blending basil with nuts and oil.
