- 1 (15-ounce) can of black beans, rinsed and drained
- 1 large ripe avocado
- ½ cup frozen or canned corn
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro, chopped
- 1 tablespoon lime juice
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper to taste
- 4 large flour tortillas
Instructions
- In a mixing bowl, mash the avocado and mix in lime juice.
- Add black beans, corn, red onion, cilantro, spices, salt, and pepper. Gently fold to combine.
- Warm tortillas in a skillet or microwave.
- Place filling in the center of each tortilla and roll tightly.
- Serve immediately.
