  • 1 large ripe avocado
  • ½ cup frozen or canned corn
  • ¼ cup finely chopped red onion
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • ½ teaspoon cumin powder
  • ¼ teaspoon chili powder
  • Salt and black pepper to taste
  • 4 large flour tortillas

Instructions

  1. In a mixing bowl, mash the avocado and mix in lime juice.
  2. Add black beans, corn, red onion, cilantro, spices, salt, and pepper. Gently fold to combine.
