Ingredients
- 2 cups plain Greek yogurt (full-fat or low-fat)
- 1/4 cup peanut butter (creamy or chunky)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1/2 teaspoon vanilla extract (optional)
- 1/4 cup mini chocolate chips (dark, milk, or semi-sweet)
- 2 tablespoons chopped peanuts or other nuts (optional)
Instructions
- In a medium bowl, mix together Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Line a baking sheet with parchment paper. Spread the mixture evenly onto the sheet to about 1/4 inch thick.
- Sprinkle mini chocolate chips and optional chopped nuts over the top.
- Freeze for at least 2-3 hours until firm.
- Once frozen, lift the bark from the parchment paper and break into pieces.
